Yum! Now that zucchini’s are on sale for $2 kg I’ve needed recipes that satisfy… This one I rather love! Try what you will, don’t just stick to the recipe, throw in your own flavors and mess around with the quantities till your taste buds are ccontent!

  • 1tsp Olive oil
  • 2 garlic cloves or 2 tsp of crushed garlic
  • 1.5lb grated zucchini
  • dash of salt
  • dash of pepper
  • basil and oregano to taste (I used about 1 tsp each)
  • 1c panko
  • 1 large beaten egg
  • 1/4c Romano cheese, though 1/4c cream cheese works just fine
  • 1 jar of passata to serve mixed with herbs of choice, I like Oregano but you can use whatever takes your fancy

Preheat the oven to 165 Celcius. Spray a cooking sheet with cooking spray.

Pan fry olive oil, add garlic and sautee it for about 30sec and add zucchini. Add a dash of salt & pepper and cook until all the juices have evaporated. Place this in a colander and remove any left over juices. Once done, add this to a bowl with panko, egg and cheese, add some of your chosen herbs to taste. Mix this together.

Scoop these out with a table spoon and roll them into tight balls.

Bake till golden brown.

Heat the passata and add a sprinkle of your desired herbs, serve meat-less meatballs with red sauce drizzled over the top.
